Turkey meatball sauce


Ingredients 

4 spring onions (washed and sliced)
1 small red onion (finely chopped)
4 small carrots (sliced)
2 English potatoes (cubed)
Bell peppers (red and green; chopped)
Fried Turkey meatballs 
2 tablespoons coconut oil
1 cup Meat stock 
salt to taste
1 tablespoon corn flour 


Instructions


  1. Add coconut oil in a wok and heat up. Once heated, add potatoes followed by carrot; allow to fry for about 2 minutes
  2. Add onion, spring onions and stir in; allow cooking for another 2 minutes.
  3. Then add the meat stock and water, taste; adjust taste by adding salt. 
  4. Place in the fried meatballs, carefully stir in. Reduce gas to the lowest, cover pot with lid and allow to simmer for about 5 minutes. Turn occasionally. 
  5. Place corn flour in a bowl, add little water to dissolve and pour in the sauce pot (this acts as a thickener)
  6. Stir in and allow to simmer for about a minute, then add the bell peppers (if the sauce is too thick for you, pls add more corn flour).
  7. Simmer for couple of minutes, Check that the meatballs are cooked through. Then turn off gas and enjoy.

Simple Egg Fritata


Ingredients 

6 medium eggs
knob of butter
1 teaspoon coconut oil
1/2 teaspoon Foodace All Purpose seasoning 
1/2 teaspoon dried parsley
1/2 red onion (sliced)
Salt (add to your satisfaction)
1 large tomato (slice)
Parsley (to garnish)

Instructions

  1. Crack eggs in a bowl, add Foodace All Purpose seasoning, dried parsley and salt. Whisk and set aside.
  2. Pre-heat grill to medium heat.
  3. Over a medium gas heat, place an ovenproof frying pan, add the butter and coconut oil. Once melted, pour in the whisked eggs. 
  4. Once the whisked eggs go on the pan, turn down the heat to the lowest. 
  5. Place the sliced onion, sliced tomato and parsley (arrange to suit you, you can add any vegetable of choice)
  6. Once the bottom of the egg starts to firm up, transfer to the grill. 
  7. Grill for about 4 - 5 minutes or turn off the grill once it's firms and golden. 
  8. Enjoy.

Garlic and Parsley King Prawns



Ingredients


500g fresh King prawns (peeled and deveined)
2 garlic cloves (minced)
2 tablespoons butter
1 tablespoon coconut oil
1 teaspoon Foodace All Purpose seasoning
1 tablespoon dried parsley
1/4 teaspoon ground garlic

Instructions


  1. Place prawns in a bowl, add all purpose seasoning and garlic: combine and leave to marinate for about 5 - 10 minutes.
  2. Place a frying pan/wok over medium to high heat, melt the butter and add the coconut oil.
  3. Allow to heat up, add minced garlic; sautee for few seconds so as to release flavour.
  4. Add prawns and fry until browned. Then add the parsley, stir in and allow to fry for a minute. 
  5. Turn off gas and serve hot.

Wholemeal Tortilla Chicken Wrap



Tortilla wraps are one of the easiest on the go meal. They can be eaten warm or cold and the good thing is, they do not have to be boring. You can switch up vegetables and you can add chillies for an extra kick. This is how I enjoy mine:

Ingredients 

1 wholemeal tortilla wrap 
1 boneless grilled chicken thigh (shredded or chopped)
Handful mix leafy vegetables 
1 teaspoon mayonnaise or guacamole (healthy alternative)
1/4 teaspoon Foodace cameroon pepper spice or chilli flakes 
Little red cabbage

Instructions

Heat the wholemeal tortilla wrap in the microwave for 10 seconds (warming it makes folding easier).

Spread the mayonnaise on the wrap, place the vegetables, followed by chicken and cabbage.

Crispy Garlic King Prawns

Ingredients 

1kg king prawns 
1 tablespoon Foodace All purpose seasoning
oil for frying 

For coating 

2 small eggs
1/2 cup self raising flour
1 tablespoon garlic
1/4 cup bread crumbs 
3 tablespoons corn flour
Pinch of salt

Cooking Instructions 

  1. Clean king prawns, using a kitchen tissue, pat dry. 
  2. Place in a bowl, add Foodace All purpose seasoning, mix to coat the prawns, leave for 5 minutes. 
  3. Crack eggs in a bowl, whisk and set aside.
  4. Place the rest of the dry ingredients in another bowl, stir and set aside. 
  5. Place prawns in the bowl containing whisked eggs, leave to soak for about 2 - 3 minutes.
  6. Place a deep frying pan over a medium-high heat, fill 3 quarter of it with frying oil and heat up. To check if the oil is hot enough, toss a little flour in, if it bubbles, then oil is ready.
  7. Now, remove prawns from the whisked eggs and into the flour mix; toss to coat and deep fry for 2 - 3 minutes. 
  8. Transfer cooked prawns to a double layered kitchen tissue. Repeat the process for the remaining one.

Simple Lamb Suya Skewers


Ingredients 

Email foodacemeals@gmail.com to purchase
900g cubed lamb
2.5g salt
1 tablespoon foodace suya spice
2 tablespoons olive oil 
Skewers for threading meat (soaked in water, 30 minutes before use)

For coating 

1 tablespoon foodace suya spice
3 tablespoons sunflower oil

Combine both ingredients and set aside

Cooking Instructions 

Pre-heat grill, medium heat. 

Place cubed lamb in a freezer bag, using a tenderiser take out your frustrations on meat. Hit on them until your are completely satisfied. 

Transfer the tenderised meat into a bowl, season with salt, foodace suya spice and olive oil. Leave to marinate for a while or  cook straight away. 

Thread the lamb cubes on skewers and place on a baking tray and in the oven; grill for about 5 - 8 minutes. 

Bring out the lamb skewers, using a kitchen brush, coat the skewers with the coating mix. 

Place back in the oven and allow to grill for another 5 minutes. 

Transfer on a plate, sprinkle foodace suya spice on and enjoy.

Nutty Green Smoothie



This nutty green smoothie has become my favourite smoothie. There is something about this smoothie that is so refreshing. Here is how you can make yours. 

Ingredients

2 handfuls spinach 
1 ripe kiwi
2 tablespoons peanuts 
1 Actimel or 2 tablespoons sweetened yoghurt
1/2 cup of water
little squeeze of lemon juice

Toppings


Raspberries 
Peanuts 

Instructions


Place all ingredients in a blender and whiz up until smooth. 
Pour in  a glass and enjoy.

Easy Puff Puff Recipe

Ingredients 


2 cups plain flour 
3 tablespoons sugar
1 cup warm whole milk (liquid milk)
1/2 cup warm water
3 tablespoons nido powdered milk ( or any powdered milk)
2.5g grated nutmeg
5g yeast
Oil for deep frying

Procedure 


Pre-heat oven for about 3 minutes and turn it off. 
Place all ingredients in a bowl, mix until well combined.
Cover with cling film, followed by a kitchen towel.
Place in the pre-heated oven and allow for about 30 minutes to an hour. 
After the time frame, the dough should be twice the size.
Add oil in a pan, heat up and scoop in puff puff mix with the tips of your fingers or with an ice cream scoop.
Fry until golden brown.
Enjoy.

Extra Crunchy Chin Chin


Ingredients 


25 g unsalted butter
4 cups self rasing flour
1 cup wholemeal flour
1/4 teaspoon baking powder
1 cup nido powdered milk
1/4 tablespoon nutmeg
1/4 cup sugar
6 (1/4) cups water 

Preparation


  • Combine all ingredients in a bowl except for the water.  Using your finger tips, mix until mixture looks like coarse crumbs. 
  • Add water and mix well until the dough all comes together (as cup sizes may differ, if your dough is not well mixed, please add more water, but little by little).
  • Tip dough onto a work surface, knead until it becomes smooth (good arm exercise, not that I have toned biceps/triceps).
  • Using a rolling pin, roll out in small batches and cut into desired shapes and sizes. (I usually roll mine out thinly, this way it is even more crunchy). 
  • Add oil in a wok/pot/pan and heat up for deep frying.
  • Fry until golden brown
  • Allow to completely cool down before eating.
